White Chocolate & Sweet Potato Cake

Trying to smuggle vegetables? Ok, so this probably isn’t how you want to do that. But who would of thought vegetables could taste so good. Everything tastes good with white chocolate. OK. Save this one for a special occasion. We can make this into mini muffins too, if you would like them for a lunchbox. We don’t ice this one but we can make a cream cheese icing for you if you would like to do it when it’s cooled. Or pop a dollop of cream on the side.
